S'mores Ice Cream Sandwiches
Ice cream sandwiches and s’mores are peak summertime sweets. Combine the two, and you get a nostalgic frozen treat that can’t be beat! Toasted marshmallow + thick, fudgy chocolate sauce + chilly vanilla ice cream + crunchy graham cracker = bliss.

Ingredients
- 9 graham cracker wafers snapped in 2
- 34 marshmallows
- 1 pint of vanilla ice cream (450-500 ml)
- 1 cup hot fudge sauce
Instructions
- Line an 8 X 8 inch square pan with parchment paper.
- Line the bottom of the pan with 9 graham crackers.
- Sprinkle 34 marshmallows over the graham crackers.
- Toast the marshmallows in the oven using the broil feature. Keep an eye on the marshmallows at all times so that they do not burn.
- When the marshmallows are nice and toasty, transfer the pan to a wire rack and let cool to room temperature.
- Take the vanilla ice cream out of the freezer to let it soften a bit.
- Scoop the vanilla ice cream onto the toasted marshmallows. Spread evenly with a small offset spatula.
- Place the pan in the freezer to let the ice cream set.
- Pour the fudge sauce (room temperature, not hot) onto the ice cream layer and spread evenly with a small offset spatula.
- Place the pan in the freezer to let the fudge sauce set.
- Place 9 graham crackers onto the fudge sauce layer.
- Place the pan back in the freezer until ready to serve.
- Slice the s’mores ice cream sandwiches into 9 portions.
